Ancient Technique To Preserve Grapes

An ancient technique known as "Kangina" in northern Afghanistan has been used for 2,000 years to preserve grapes for longer. This method ensures that the grapes will last until the Persian New Year, "Nowruz," celebrated in spring.

In this laborious process, grape clusters are sealed in two pots made of special clay, which has a high content of grayish-brown pigment. The pots are then joined together to form a protective dome. The pots are then dried in the sun.

Each pot can hold about 1 pound (0.45 kg) of grapes. The pots are stored in cool, dark places, such as basements or underground. This traditional method, practiced before modern technology, allows families to preserve the taste of summer fruit during the winter.
